Crepes with Butter and Powder Sugar

So I don't want to be one of those people that makes everyone loath their day off. But boy, do I enjoy mine. Last night I stayed up late trying to get some laundry picked up after months of neglect so I wouldn't have to do it today. Spending your day off cleaning all day is not ideal. I much rather be doing things I enjoy. Like making crepes for breakfast.

Crepes for Saturday morning breakfast has been a long tradition in our family line. There are not many Saturday mornings that I am able to make them but I do enjoy being able to make up a batch every once in a while on one of my days off.

Mix together dry ingredients: 1 cup of flour, 1/4 cup of sugar, 1/4 teaspoon of salt
Meanwhile in a nonstick fry pan melt 2 tablespoons of butter. This will be added to dry mixture in just a little bit...
Now add the wet ingredients to your dry mixture. 1 cup of milk, 3 large eggs. Whisk together until batter is smooth. Now you will add your melted butter from nonstick pan to the mixture as well as 1 teaspoon of vanilla.

Now you are ready to start cooking. Have your nonstick pan preheating on medium heat. If the pan is not hot enough when you add your crepe batter to it, your first crepe will not turn out very well. You also want to have some remains of your butter that you melted in the pan to keep batter from sticking.
Pour a ladle full of batter into the pan and swirl around to cover entire bottom of pan. Let it cook until edges become golden, flip over and continue until that side is golden as well.

I like to start eating my crepes as soon as the first one comes off the skillet, all hot. Garnish your crepe the easy way by spreading some butter and sprinkling some powder sugar over top. There are many other garnishes that I love to have with my crepes but I hardly ever have them on hand and just really do enjoy the simple way to eat them.

Role it up and enjoy!

Just learned my all time favorite magazine is going under. I AM SO UPSET! And I felt that this months magazine was flooring, every page I turned, I loved! (This isn't always the case.)

This is a tragic, tragic day!

You can read more info about it here.

Create and have your Coffee too!

Last night we had another great night hanging out at Mars Cafe sipping on great drinks and getting our fingers all sticky with glue.

Our project for the evening, creating boxes out of magazine pages.

We not only made boxes/containers but also came up with many great other items that we could make too. Some absolutely ridiculous, you would have to spend hours and hours creating them. But just as well, we had fun thinking about it.

Here are a few pics of our evening and our projects.

Please feel free to come and join us for another evening of creating at Mars cafe! Our next DIY night is scheduled for Tuesday, February 10th, 7-9pm.

You are welcome to bring your own project that you are working on and enjoy the creative atmosphere, or come with supplies in hand and work on the project we are all doing. Check back for project details and supplies. Or follow me on Twitter for updates.

Chocolate Cupcakes made with Pumpkin?

Yes you may wonder, this is the only ingredients of this cake. I found out about this recipe from my good friend Sarah (Goodposture).
You need one 8 oz can of pumpkin and one box of chocolate cake mix. Could be considered Vegan or low fat, but I just want to call them SUPER YUMMY.

Mix the two ingredients together. It will be really, really thick! I added a 1/4 C of water to it to make it a little easier to work with.

Scoop batter into cupcake liners and bake at 350 for about 19 minutes or until done. These cupcakes will be more moist than normal cake batter.

Peanut Butter frosting was a MUST for these super moist, chocolate cupcakes. (sorry this is not vegan or low fat.)

I found the recipe in America's Test Kitchen cookbook. 1 C of unsalted butter, 1 C of Peanut Butter, 2 Tablespoons of Heavy Cream, 1 teaspoon of Vanilla, 2 1/2 Cups Powder Sugar. Cream together several minutes until light and fluffy.

All frosted and ready to eat.

Urbanestics D.I.Y. /craft Night

This week for DIY/Craft night we will be making boxes or bowls out of recycled magazines or newspapers.

Supplies that you will need for our project:

Old magazines or Newspapers, whatever you prefer. It makes the final product different looking depending on what you use.

Scissors and or if you have a roller cutter and cutting mat bring that.

Tacky Glue, paint brush to spread glue, container for mixing glue with a little bit of water.

Clips or clamps to hold you box together while the glue dries. (clothes pins, chip bag clips and so on)

Bone, paper folder if you have one. This item is optional, it will help folding your paper if you have one. I have also used a spoon from my kitchen in placement of a bone folder.

Here is a link for "how to" pictures on Flickr.
